  • Sai Oua (Northern Thai Sausage)

    My GF and I got a craving for some Sai Oua a week ago. We have been in the states now for about 8 months and while she cooks Thai food almost everynight for dinner we both miss the hard to come by items. So she decided to make some. Took awhile to find some ingredients but was able to gather them all up. Making this sausage is quite time consuming but well worth it when it is done. Here are a few pics of the process

    As creative as she is, she used the top of a water bottle and just forced the prepared meat into the skin

    I have to say these were awesome and with a batch of sticky rice and her spicy sauce it was worth the wait.

        Do you stuff the sausage casings by hand or inject them with a machine?

          She did it all by hand. She cut off the top of a water bottle and used it as the funnel to press in the meat. Very efficient quite honestly.
