Just wondering if anyone has ever been done in by the Thai coppers. A traffic fine that was unwarranted or full out extortion. I have not but heard plenty of yarns about farangs that have had to pay. Any stories to tell?

Yes once while heading up onto the toll way in Bangkok, stopped by a single policeman and asked for driver licence, then refused to give my licence back until I paid 500 baht.
after a screaming match between the police and my wife I paid the 500 baht just to get going. Every other fine I have always deserved.
copped a lot of grief from the wife over it.

Sometimes it can work in your favour. I was 35km into a 70km journey and got stopped for speeding. The daft bugger said I had to go back 35km to the city I just left and pay the speeding ticket there.
As I had booked to travel on a scheduled ferry service, I asked if I could just pay him instead.
Sorted.
Another time I was on the bike and got stopped for a helmet check next to Punphin police station. It was a regular checkpoint and I should have known better. When I walked into the station to pay my fine, I was surprised to be ticketed for only Bt200. I asked why it was a lower fine and he just pointed to the helmet I was carrying. I get a discount for carrying a helmet but a fine for not wearing it.

Years ago, when I often didn't wear a helmet, I'd get stopped on my scooter from time to time but I've never paid anything. For the keener police, I'd talk in French until they gave up but usually I'd just get waved on when they realised that a conversation in English was looming, though once I got bought lunch and a beer by the senior policeman on duty when I got caught up in a mass stoppage of bike riders. I was as guilty as everyone else but they ushered me off to a nearby restaurant with profuse apologies. Bizarre.

The Phuket police have a road checkpoint close to the hotel most times and the senior officer speaks superb English. He now knows I have a Non-imm B visa, work Permit, driving licence, and just about anything else he could want to know. He now stops me to practice his English.

Fair cop, though - littering is an arrogant thing to do and can hardly be called a shake-down . . . as long as it's not fabricated - no worries
