The Philippines. What's it like ? Going there soon...
That's because there's really no such thing as Philippine food as such. I can't think of one Philippine dish and I have never seen a Philippine restaurant anywhere.
Why?
Because the food sucks.
Amongst the broader Asian cuisines, Filipino probably ranks at the bottom.
Renting big bikes in Boracay is about as sensible an idea as renting surfboards in the Sahara. It's a very small island, with nothing that remotely resembles a road.
I've had quite a lot to do with the Fil's over the years, I had a half share of a resort in Pto Galera (a place called sabang), I invested in condominiums in Boracay (done my dosh), even imported a filipino beauty to Sydney for a pleasantly wasted year. Used to hang out with Freddy Aguilar too.
I found it vaguely frustrating to return there recently, I was visiting a mate who lives on a fishing island near Cebu. It's like the place has remained in a time warp, the contrast to Thailand is stark. They were pretty much at the same level in the 80's. Sex abounds though, if thats your thing.

Interesting insight...
There must be some tax reasons why the Fils hasn't been able to attract the capital. Thailand was the main bubble country in 1997 to though. It's always been this way. That's why I think it's structural. The Fils is also scattered which isn't appealing to big business.
I'm not trying to make the bigtimes though. But maybe this decade will be the decade it takes off. I'll be prospering on my trip
I don't think you can directly compare Boracay to either mate- it's quite a small atoll (everythings walkable), and White Beach is one of the best beaches of it's kind in the world. Yes, of course it's got the bar scene, but it's no pattaya or bangla. There is a northern shithole called Angeles that only exists for the bar scene, if you wanna check it out. it can be fun for a few days. I have a soft spot for the fil's, although my recent visit did nothing to enhance that. There is superb natural beauty there, and much to see- most of which I haven't. The people are fun, and communicable (a direct contrast to los). I'd recommend you check out a few places, boracay is lovely but would not be my personal choice to set up shop (island fever). Pto galera is one of the most beautiful natural harbors in the world- taking the ferry over from batangas for the first time, it pretty much takes your breath away. Northern Palawan is incredibly beautiful, it vies with bora bora & ilk as the most spectacular thing you'll ever see. Check it out.

I'll see if I can fit Pto galera in. From your description it seems like Boracay is more like KOh Samet or Koh Chang. I liked Chang but Samet is set up too much like a campground. I am traveling with my flip gf who I met in Canada so its not a punting trip.
The Philippines? A cesspit of germs and disease and folk that have no idea what simple hygiene is. Stop by the chemist and pick up some Imodium A-D before you board your flight, you will most certainly need it.
